How easy is it to smoke lamb shanks? Too easy. Here’s how we did it.

1. Remove any hard fat. Olive oil as a binder. Add your favourite rub or just salt, pepper and garlic
2. Weber Kettle - set up for indirect. Shoot for 275 to 300F.
3. 1st hour - meat close to charcoal and rotate every 20min
4. Next 2.5 hours - Tray with onion cut into steaks. Add some garlic. Pour over stock. Cover with foil. Done with 205F

The Fireslap lump charcoal easily lasted for the 3.5 hour’s with plenty of heat left to keep cooking.

We like to experiment! Smoked turkey breast for the first time yesterday. Easy as!
1. Remove skin.
2. Dry brine with salt (24 hours)
3. Add pepper and any other steak rub
4. Smoke at 275 to internal temp hits 160
5. Wrap in foil with a lot of melted butter. Let sit in smoker or in a warmer for 20min - done when hits 165F internal
6. Slice!

4. Reverse sear 2 minutes each side
